Traditional Irish Bacon and Cabbage
Ingredients
- 1 Traditional Slab Bacon (2 lb)
- 1 head of green or white cabbage
- 4 potatoes in jackets
- 2 onions
- 4 Carrots or 1 turnip
Cover slab bacon with cold water. Bring to boil and then simmer for 25 minutes per 1 lb plus 25 minutes over.
Remove outer leaves of cabbage. Cut in quarters, peel onions and cut in half, slice carrots or turnip add to the saucepan and simmer for the last 30 minutes.
Boil potatoes with jackets separately.
Remove bacon to chopping board and carve into thin slices.
Drain vegetables, season with salt and pepper add a knob of butter.
A Traditional Irish Boiled Dinner can be served with any one of the following: Parsley Sauce, Chef Brown Sauce or Colman's English Mustard.
